Costa Fuego / Sushi
Not in a strip mall. Not from a case. A full sushi bar with fish cut to order, built directly over a lake.
Search for sushi in Woodland or Davis and you will find strip-mall storefronts. Costa Fuego is something else: a live-edge walnut sushi counter inside a restaurant standing on pilings over a wakeboard lake, twenty minutes north of Sacramento off I-5.
The rice is built from scratch every morning. The fish, maguro, hamachi, hotate, escolar, is cut when you order, not before. And the seat you eat it in looks out at open water.
Spicy tuna, cucumber and shrimp tempura inside; spicy crab, salmon, tuna, avocado and tobiko outside, with gochujang aioli and a tempura jalapeno on the side. The one people photograph.
Diced hamachi on crispy rice with sweet potato crunch, tobiko, ponzu and spicy mayo. Hot, cold, crunchy, and soft in one bite.
Lightly seared tuna over rice with crispy onions and the secret sauce. Order it at the counter and watch it happen.
From Davis, 15 minutes up Highway 113. From Sacramento, 20 minutes north on I-5. Free parking, no park ticket needed, and a deck where lunch comes with wakeboarders carving past.
Sushi catering travels too: custom platters to go, or the portable sushi bar with a chef cutting to order at your event.
